Around twenty years ago, Christophe Nominé decided to take over the family farm. In 2017 he started to make farmhouse pasta from the farm’s wheat, which he christened “Les Nominettes.” His premises are located at the foot of the Montagne de Reims national park, in the small village of Condé-sur-Marne.
Contrary to other pasta, which is made from durum wheat, this pasta is made of soft wheat, grown on the farm using sustainable agricultural methods.
“Pasta with taste, even without a sauce and which needs only 5 minutes cooking time compared to 10 minutes for durum wheat pasta.”
The pasta is made with four types of flour: plain, semi-wholemeal, “gourmande” and half wheat / half buckwheat.
Les Nominettes are now made with water from the only natural spring in the Champagne-Ardenne region, the Aurèle spring.
