Scamone is cut from the rump of the pig: one of the most tasty and precious cuts of the animal. This is the most delicate part of the ham, far from the bone, the flesh is very tender and tasty, in Gargano it is called : the "Culatello" of Gargano, like the famous Culatello di Zebello of Parma. The piece is closed and well tied up, it keeps very well. Our scamone is lightly marinated in Nero di Troia red wine and seasoned with Gargano herbs and berries. It is eaten like all raw hams: thinly sliced on toasted bread, lightly oiled with a good olive oil (olio di serra). Scamone is gluten-free. It is offered in vacuum-packed pieces of about 1.7kg, with a shelf life of 6 months.
