Millesime Zio Gino -Dauno Alto Tavoliere (PDO). Year after year, we produce a unique olive oil out of « fruttato verde » olives offering an intense olfactory bouquet, a fruity taste, and a balanced bitterness twisted with a little bit of piquant. This olive oil reveals the perfect mix between the superior quality of our olives and the typicity of our beloved and rich terroir : the Gargano. Every year from the second week of October, the harvest of the olives is done manually and day after day. The transformation of the fruits into oil is obtained through cold extraction in a last generation and certified organic mill. This sophisticated olive oil is elaborated with 80 % of Provenzana olives and 20 % Risciola olives. Both are cultivated on our Ferrantone, Valle della Forca and Bocca Doro olive trees parcels. All of which are hundreds of years old and have been ever since looked after with responsible and organic cultivation methods. And it is because we have always refused to use pesticides with our crops that a lot of other plants, flowers and trees grow produly among the olives and give them such a unique taste.
