Muscisca di Maiale is an old-fashioned product that takes up the ancestral habit of the shepherds during the transhumance. The latter used goat or sheep sinews cut into strips and dried in the sun as a rope for transport - which they also chewed to give themselves strength and energy. The Muscisca di Maiale revisits this custom: the strips of dried meat we offer are cut from the ham and the loin of the pig. The meat is particularly lean and the texture is very firm. It is carefully braised and marinated with chilli and fennel: typical tastes of our country.
