Guanciale is a great classic of Italian cuisine. It is the star ingredient of the emblematic "pasta alla carbonara"! This piece of meat can be found all over the country, especially in Gargano (Puglia - Italy) where the inhabitants have made it one of their culinary specialities. Guanciale comes from the cheeks or jowls of the pig, hence its name: "guancia" which means cheek in Italian. Its meat combines muscle and fat of superior quality, which gives it a firm yet delicate consistency. It is prepared by rubbing the pig's cheek with salt, sugar and Gargano spices (black pepper, thyme, fennel and garlic), then left to dry for a few weeks. It will be ideal to accompany your pasta, to be married with a good Italian cheese and quality sauces, like our pomodoro and datterino tomato sauces raised in organic farming. Guanciale is gluten-free and is available in vacuum-packed pieces of about 700g with a shelf life of 6 months.
