Filetto Lardelatto is made from the pork tenderloin, in the loin near the belly. This excellent part is very lean, and the fat from its rind gives it a subtle softness during the maturing process. Our Filetto is delicately seasoned with salt and pepper after boning, and lightly marinated in red wine. The piece is closed and well tied up and keeps very well. The Filetto Lardellato is gluten-free and is available in pieces of 2 to 3 kg.
