- Capocollo marinated in wine: Nero di Troia, typical of Gargano

Capocollo is similar to what is known as "Coppa" and is found in Corsica and Northern Italy. Our capocollo is carved from the loin of the pig and marinated in Nero Di Troia wine, a typical Apulian grape variety. It is carefully flavoured with our own aromatic herbs during the salting process, giving it a sweet Gargano aroma. It is then carefully tied during the drying process to give it all its characteristic mellowness. It reveals all its flavours and generosity cut into thin slices: its flesh is tasty and its fat very fine, its chewiness is pleasant in the mouth. It can be eaten in foccacias, in sandwiches, flavoured with a little Olio di Serra extra virgin olive oil, as an aperitif with cheese... Many combinations are possible, but it is surely tasted alone that it reveals all its splendour. It is a real discovery. Capocollo marinated in Nero di Troia is gluten-free. It is offered in pieces of approximately 1.5 kg, vacuum packed with a shelf life of 6 months.
